Glenn mentions VoIP.  A particular notion I've been noodling (not  
original, I'm sure) would be to implement an Asterisk open-source PBX  
on each of a number of MEP nodes, then hack together a dynamic  
mechanism for inter-pbx discovery.  The goal would be an ad-hoc mesh  
phone system for emergency and special-event comms.

Could that be done on WiFi?  Sure, but between the power limits and  
the channel congestion I'd hesitate to try it.
